Classic Peanut Noodles with Cucumbers and Herbs

Intro

Peanut noodles can easily turn heavy or flat, so this version keeps the sauce loosened and bright, then layers in cucumber and herbs for real contrast. The end result is rich enough to satisfy but still sharp and fresh on the palate.

Ingredients

  • For the noodles: 12 oz wheat noodles or spaghetti, 1 Persian cucumber halved and thinly sliced, 3 scallions sliced, 1/2 cup cilantro leaves, 1/4 cup mint leaves
  • For the sauce: 1/2 cup classic-peanut, 2 to 3 tbsp warm water, 1 tbsp lime juice, 1 tsp soy sauce, 1 tsp honey, 1 small garlic clove finely grated
  • To finish: crushed roasted peanuts, lime wedges, chili flakes if desired

Instructions

  1. Cook the noodles in well-salted water until tender but still with a little bite, then drain. Rinse very briefly under cool water only if needed to stop the cooking, then drain again thoroughly so you do not water down the sauce.
  2. In a large bowl, whisk together the peanut sauce, warm water, lime juice, soy sauce, honey, and garlic until smooth and spoonable. Add water a little at a time until the sauce falls in thick ribbons from the whisk; it should coat noodles generously without turning gluey.
  3. Add the warm noodles to the bowl and toss until fully coated. Let them sit for 1 minute, then toss again. This short rest lets the noodles absorb some sauce so the flavor tastes integrated rather than simply dressed on the surface.
  4. Fold in the cucumber, scallions, cilantro, and mint just before serving so they stay crisp and vivid. Finish with crushed peanuts, lime, and chili flakes if you want more heat.
